Easy no bake fruit tarts
These cute little tarts are a treat to the eyes and they taste delicious.
Moreover, they offer a perfectly balanced snack packed with antioxidants (from the berries), protein (from the nuts and oats), healthy fats (from the coconut yoghurt), and fiber (from the oats and dates).
They’re very easy to make, and will look great on a brunch table or dessert buffet.
In addition, they’ll suit many guests because they’re:
- Vegan
- Gluten-free
- Dairy-free
- Egg-free
- Refined sugar free
Ingredient highlights:
- Coconut yoghurt: those who don’t tolerate dairy or are feeding lactose-intolerant kids will probably be familiar with this ingredient. You can find it in health food stores and even in the better supermarkets (in The Netherlands you’d find this one for instance). You can also easily make it yourself with coconut milk and probiotic capsules.
- Medjool dates are easily digested and an excellent source of fiber. They’re also rich in B-vitamins, copper, potassium, manganese, magnesium, iron, and phosphorus, zinc, and selenium. Although fairly high in glucose and fructose, dates contain a special kind of soluble fiber called beta-D-glucan, which helps control blood sugar. In addition, dates are high in antioxidant and anti-cancer compounds.
Timesaving tip:
Keep a few tarts (the base) in your freezer and take out a few hours in advance. Just top with yoghurt and fresh fruit for a delicious and easy snack.

Makes 4 mini-tarts
*Unless stated differently, my recipes are measured with US measuring cups like these ones.
Directions
Make the base simply by blending all dry ingredients in a food processor until a sticky dough forms.
Press the dough into small tart molds (see tip below) and place in the freezer to harden for at least 1 hour.
When ready to eat, fill them with your favourite yoghurt mixed with some lemon juice and maple syrup to taste.
Top with a mix of fresh berries.
