Easy & healthy watermelon popsicles
Homemade popsicles are a great invention for health-minded busy people like us.
With a bit of planning I usually manage to have a few different tastes in my freezer, ready to pop out on hot summer days.
Check out these berry popsicles for an equally delicious alternative with berries, bananas and coconut milk.
These watermelon popsicles are even much simpler as they contain just watermelon and a squeeze of lemon juice if desired. We like them plain like this, but for sweeter teeth you may want to add a bit of honey, maple syrup or date caramel.

Ingredients
Makes 8 popsicles
*Unless stated differently, my recipes are measured with US measuring cups like these ones.
Directions
Cube the watermelon and remove most seeds.
Place watermelon cubes, lemon juice and sweetener if using in a blender.
Blend on high until smooth.
Transfer to popsicle molds and freeze until solid (about 4 hours).
