Gluten-free Banana almond bread

Banana bread. Probably one of the most featured recipes on the web. However, many recipes are made with tons of sugar and white flour, which makes it an inflammatory snack.

This healthy alternative is free of refined sugar, white flour, gluten and dairy but is equally tasty (even tastier if you ask me)!

It’s very easy and quick to make and you can add a few chopped nuts, raisins, or dark chocolate chips if you like. It’s also wonderful toasted.

Egg-free option

If you can’t have eggs, you could try this recipe with a flax egg instead: 1 normal egg = 1 tbsp. ground flaxseed + 2 ½ tbsp. water. But please note I haven’t tried this myself.

Ingredients

3 eggs

  • 2 tbsp raw honey
  • 4 tbsp coconut oil
  • 2.50 cups (250g) almond flour
  • 2 ripe bananas cut in pieces + 1 extra banana for decorating
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar to activate the baking soda
  • 1 tsp cinnamon

 

*Unless stated differently, my recipes are measured with US measuring cups like these ones

Directions

  1. Heat the oven to 180° C or 360° F
  2. In a food processor, mix the banana pieces until mashed. 
  3. Add all other ingredients and mix until well combined. 
  4. Line a loaf pan with parchment paper and pour the mixture in
  5. Optional: it looks pretty if you slice a whole banana lengthwise in two and put it on top of the cake mixture before baking
  6. Bake for about 40 minutes (until a knife comes out more or less clean)
  7. Allow to cool before enjoying
