Most dishes taste better with a sauce, and this fresh yogurt sauce with cucumber and mint is a perfect add-on for many of my dishes. It tastes great with my simple one-pot vegetarian stew, mackerel cakes, salmon burgers, or spinach & cheese quinoa cups.
This simple yoghurt dressing is fresh, healthy, and above all super simple to make!
- 2 cups whole organic yoghurt
- 1 medium cucumber, finely chopped or sliced
- Lemon juice to taste
- Salt & pepper to taste
- Fresh or frozen mint
- Combine all ingredients and “voilà”!
